2 lbs ground beef
2 eggs
1 med russet potato, halved
1 onion, halved
2 cloves garlic
3/4 cup rice
2 stalks celery
1 can diced tomatoes
1 tsp beef boullion
1 tsp tomato boullion
1 tbsp cumin
1 tsp black pepper
Dash of red pepper flakes to taste (optional)
12 cups water


How Do I Make Trisha's Albondiga Soup?

Here is how you make Trisha's Albondiga Soup:

In a large soup pot, set water to boil. Meanwhile finely dice half of the potato and half of the onion. place in a large mixing bowl and add the two eggs. Grate the garlic into the egg mixture, mix wel, set aside. Chop the other half of the potato and onion, and the celery into bite sized pieces, set aside.Add the ground beef to the egg mixture, then add rice and the teaspoon of flour. Make 16 2-oz meatballs.To the boiling water, add the 2 tsps of the boullion and the can of tomatoes. Bring back to a boil. Once broth is boiling again, add the meatballs, diced potatoes, onions, celery and cumin. If desired add red pepper flakes.Boil for about 40 minutes or until meatballs are done.
