Here is how you make Roasted Cabbage Soup:

Toss shredded cabbage with 1 tbsp of the olive oil. Spread on a baking sheet and place in a 375 degree oven. Every 10 minutes, turn/stir cabbage. Cook for about 40 minutes or until it is reduced by half.In the meantime, melt butter with the rest of the olive oil and begin cooking the onion over low heat until it begins to brown (20 minutes or so). Add celery and onion and raise temperature slightly. Cook until all vegetables become slightly tender. Add broth and potatoes and bring to a boil. Add cabbage and rest of water and lower temperature.
