4 tbsp extra virgin olive oil
1/2 tsp ground black pepper
2 12 oz. jars roasted red peppers, or 4 fresh red peppers, roasted, peeled, and seeded
1 tsp salt
1 15 oz can chick peas

Here is how you make Roasted Cauliflower and Red Pepper Soup:

Preheat the oven to 400 degrees F. In a large bowl, toss cauliflower pieces, garlic, and 1/2 dried herbs with 1/2 of the olive oil. Spread out in a baking sheet with sides. In the same bowl, toss the potatoes, carrots, onion, and 1/2 dried herbs with the remaining oil. Spread out in a second baking sheet with sides.Roast the vegetables in the preheated oven until toasted and tender, about 40 minutes for the cauliflower and 50 minutes for the potatoes and carrots, stirring each sheet half-way through.When the vegetables are done, transfer to a soup pot and pour in the chicken broth. Add the red peppers. Season with pepper and bring to a boil. Cook over medium heat for 30 minutes.Puree the soup in the pot using an immersion blender, or transfer to a blender and puree in batches, then return to the pot. Season with salt if needed.
