1 medium-large onion, diced
3 medium carrots, diced
3-4 stalks celery, diced
4 garlic cloves, minced
arugula/baby spinach salad blend (4-5 oz. bag)
4 cups water
1 bouillon cube (i.e. Rapunzel Vegetable Bouillon with Sea Salt)
salt & pepper to taste

Here is how you make Simple Mirepoix Soup:

Pour olive oil in pot, diced onion, carrots, celery and cook for about 5 minutes until translucent. Add garlic and continue for cooking for 5 minutes. Add 4 cups of hot water with bouillon cube dissolved in water. Bring to a boil and cook for 25 minutes on low. Add arugula/baby spinach, salt. Cook an additional 5 minutes until completely wilted.
