1 pound black eyed peas, soaked overnight, drained, and picked through
1 pound smoked pork sausage (I used spicy)
2 medium onions, diced
32 oz. low sodium chicken broth
2 cups water
3 cups peeled, diced potatoes (about 1" chunks)
12 oz (+/-) fresh, shredded collard greens
Salt and fresh ground pepper to taste

Here is how you make Black Eyed Pea, Sausage, and Collard Greens Slow Cooker Soup:

Place soaked/ prepped black eyed peas in the bottom of the slow cooker. Slice smoked sausage into 1/4" rounds and place over top of the beans. Layer diced onions over the sausage and beans.Pour chicken broth and two cups of water over the top of the beans/ sausage/ onions. Stir to combine. Set slow cooker to cook for 8-10 hours, and walk away.Approximately 90 minutes prior to meal time, check flavor and add salt/ freshly ground pepper to taste. Remember, this is a sausage soup so you may not need any added salt (I didn't). Stir in diced potatoes, cover and let cook until tender (40 minutes to an hour). Half an hour before serving, add collard greens. Stir to combine, cover. Check in 15 minutes and give it another stir to make sure all greens have thoroughly combined and wilt/ cook well.Eat. Serving Size:?Makes approximately 10 1-cup servings
