3 oz. ground sirloin
1/4 cup chopped onion
1 (14 oz.) can chicken broth, fat free, reduced sodium
1 cup coarsely chopped fresh zucchini
1 (14-1/2 oz.) can diced tomatoes
1 (8 oz.) can tomato sauce, no salt added
1 cup red beans, drained and rinsed
1/3 cup frozen corn
2 tsp. lemon juice
1/8 tsp. ground black pepper
1 clove minced garlic

Optional: Feta cheese, reduced fat (sprinkle on top when serving)

Here is how you make Slow Cooker Mediterranean Soup:

Cook ground sirloin and onion in skillet until meat is browned and onion is tender, drain off fat. Cut zucchini lengthwise into four quarter strips, then cut each strip crosswise into 1/8 inch pieces.Combine browned meat and onion with remaining ingredients (except feta cheese) in a 2-quart slow cooker.Cover and cook on low for 5 - 6 hours.Optional: Sprinkle with feta cheese when serving.
