0.25 tsp Pepper, white
1 dash Salt
4 cup Campbell's low sodium chicken broth (+hot water as needed)
1 cup, RAW Cashews, soaked in water for 1h (water discarded)
0.75 cup Canned Coconut Milk (full fat used here)
1 cup Lentils dry
1 tbsp Extra Virgin Olive Oil

Here is how you make All-spicy coconut ginger cashew soup:

Soak cashews, mince garlic and ginger, chop onion, slice carrots.In big pot, saute onion in the olive oil. When translucent add garlic. After a few minutes add the carrots, ginger, and cashews. Stir and saute for another minute before adding spices and continuing to saute at a higher heat for a minute or two.Add chicken broth (with as much water as you may want to), bring to boil, then simmer for about 20-30 minutes (until carrots and cashews are soft enough to be blended).At this time you could prepare lentils separately or add them to the whole soup as it is cooking. Once carrots and cashews are soft enough, turn off heat. Stir in lentils (if made separately) and coconut milk.Transfer in batches to a blender to puree into a smooth soup.
