I made this after listening to a piece on NPR about a chickpea stew. It came out FANTASTIC. Easy, inexpensive really, fast and impressive in it's own way. Mild but flavorful. You really could leave out the cream, but it gives it a nice finish and doesn't add that much. Chances are you could leave that out and halve the olive oil, but it won't be as deep.

3 TBSP olive oil
6 cloves garlic
1/2 chopped onion (fine)
1 finely chopped yukon gold potato
2 tsp. ground cumin
2 tsp. ground coriander
32 oz box vegetable stock
1 15 oz. can chickpeas, drained
1/4 pound of spinach leaves (or more if you like)
3 tbsp heavy cream
White pepper to taste
lime juice to taste

Here is how you make Chickpea, Spinach and Garlic Soup:

In a sturdy soup pot, heat olive oil over medium to medium high heat. Add onion and garlic and saute until garlic is golden and onion translucent. Add cumin and coriander, stir and cook one minute until fragrant.Pour in vegetable stock and add potato. Bring to simmer and cook about 5 minutes.Add chickpeas and spinach. Simmer another 7 minutes until spinach wilted and potato is soft.Stir in cream and some white pepper to taste (maybe 1/4 tsp to 1/2).Add lime juice 1 Tbsp at a time, tasting until you like the edge.
