Here is how you make Cream of Spinach Soup - Julia Child:

In a heavy-bottomed pan, cook onions slowly in 2 tbsp butter for 8-10 min until tender. Trim & wash spinach. Coup roughly. Stir spinach into onions; cover and cook over low heat for 5 minutes, stirring occasionally. Add chicken stock and bring to a boil and stir in the rice. Add seasonings. Simmer partially covered for 20 min or until rice is tender. Puree, bring again to a simmer and thin w/more chicken broth if liquid is too thick. Blend the cream and egg yolks in a bolw with whisk. By driblets, beat in two cups of hot soup. Pour back into saucepan - rewarm slowly, stirring constantyl to almost a simmer. Remove from heat - correct seasoning, add lemon juice.
