1 medium carrot, peeled and chopped
1 medium stalk of celery, chopped
1/2 small onion, chopped
2 cloves of garlic, minced
1 medium sweet potato, cubed
1 cup of lentils (prefer brown due to texture but red works just fine)
4 cups of stock (chicken or vegetable work best)
1 cup baby spinach leaves
Juice of 1 lemon
Salt and pepper to taste
