1 cup lentils
1 onion, chopped
3 large cloves of garlic, chopped and divided 2 and 1
2 cups chicken broth
2 cups water, add as needed
coriander
smoked cumin
crushed red pepper
bay leaf
salt & pepper
olive oil, about 1/2 tbsp


How Do I Make Lentil Soup With Lemon and Spinach?

Here is how you make Lentil Soup With Lemon and Spinach:

Drizzle a small amount of olive oil in pan or wide, shallow pot and add onions when hot. Cook until slightly caramelized, then toss in two cloves of garlic and let go just until you smell it, add chicken broth, scraping the pan as you pour. Add lentils, bay leaf, spices, and float 4-5 very thin slices of lemon on top. Bring to a low boil for a few minutes then reduce to a simmer, stirring occasionally. Add water as needed, more or less depending on how thick you'd like your soup. Cook for 30-40 minutes until lentils are tender. Remove from heat.In separate pan, heat up another small drizzle of olive oil and when hot add spinach and garlic. Let spinach wilt only slightly, remove from heat. If you'd like your soup smooth, use an immersion blender in the pot.
