~ Blanch the fresh spinach and set aside.~ Heat the oil in a sauce pan and fry the chopped onion, garlic, bay leaf, peppercorns, cinnamon stick~ Add the blanched spinach; stir and cook.~ Remove the stick of cinnamon.~ Blend the cooked spinach, onions etc.~ Pour the paste into the saucepan, add water (or broth) till it is your preferred consistency, add the stick of cinnamon back to it, and simmer for 5 - 10 minutes.~ Add about 3 tbsp of cream/half and half/skim milk.
