1 large Onion
2 Leeks
1 Carrot
1 Potato
5 cups Water
1/2 cup Half and Half
1/2 cup Skim Milk
Nutmeg, to taste
6 oz. Spinach
Salt and Pepper to taste

Here is how you make Spinach and Corn Soup:

Serves 41. Cut the kernals off the corn on the cob. Try to scrape off as much of the milky liquid off of the cob and reserve that.2. Heat the butter and oil in a large saucepan. Add the onion and the leeks. Cover the saucepan and cook for 3-4 minutes, or until softened. 3. Add the carrot, potato and water with a large pinch of salt. Bring to a boil and stir in corn kernals and the milky liquid. Reduce heat to low cover and simmer for 25 minutes. 4. Allow the soup to cool slightly and transfer to a food processor and puree until smooth.5. Return to saucepan and add the half and half and milk and stir to blend. Season with salt, pepper, and nutmeg. Simmer over low heat until reheated.6. Add spinach and cook for 4-5 minutes, stirring frequently until the spinach is wilted.
