I Butternut squash, peeled, chopped and place in a sauce pan. Add the peper which has also been chopped, add the water, ( you can boil this first it brings the pan to boiling point sooner). You can also add a vegetable stock cube. Once the pan is boiling turn down the heat to a simmer and cook for about 20 minutes untill all vegetables are soft. Add the soup to a food processor or blender to blend the soup. Then return to the heat and add the cream cheese warm up untill the cheese has melted.
