I got this recipe from my father-in-law. I have no idea where he got it from but we like it and it is easy to make. For the calculations I used 'A Taste of Thai' , light coconut milk. What Are The Ingredients For Golden Butternut Squash Soup Recipe?The ingredients for Golden Butternut Squash Soup are: 3 cups butternut squash, cubed1 lg onion, chopped 2 cloves garlic, chopped 1 tbsp fresh ginger 1 tsp turmeric 1 tsp curry powder 2 3/4 cups + 1 tbsp. low sodium chicken (or veg.) broth 3/4 cup lite coconut milk 2 tbsp fresh cilantro Salt and pepper to taste if desired. How Do I Make Golden Butternut Squash Soup?Here is how you make Golden Butternut Squash Soup: Peel squash and cut into cubes. Heat 1 TBSP broth in medium pot, add onions and saute about 5 mins, until translucent. Add garlic and ginger, saute another minute. Add turmeric and curry powder, mix well. Add remaining broth and squash, mix well and bring to a boil on high heat. Once it boils, reduce heat to medium low and simmer, uncovered until squash is tender, about 10 mins. Place in blender (or use an immersion blender) and blend with the coconut milk. You may need to blend in batches to get it really smooth. Start with low speed so the soup does not erupt and burn you. Blend until smooth, about 1 minute. Thin with a little extra broth if needed. Season to taste with salt and pepper if you like. Reheat soup and add cilantro.
