Here is how you make Kaitlyn's Butternut Squash w/Bacon Soup:

Cook the bacon in a large pot, then remove and cook the onion & garlic in the bacon grease. I cooked the squash in the microwave before scooping out the soft flesh into the pot. Add water, vinegar, and ginger and simmer for about 20-30 min. I chopped and added the bacon back to the soup before putting the whole mix in the blender (it would probably be better to use a stick blender, but I don't have one). Freezes very well.
