3 carrots, peeled and finely chopped
1 shallot, peeled and coarsely chopped
1 small yellow onion, peeled and coarsely chopped
1 medium granny smith apple, peeled and coarsely chopped
1 tsp. minced garlic
3 1/2 cups cubed butternut squash (I used the bagged frozen kind)
4 cups vegetable stock (I used Wolfgang Puck's)

1 tsp. Italian seasoning
1/4 tsp. ground coriander
1/2 tsp. dried thyme
1/2 tsp. ground black pepper
1/2 tsp. marjoram
1/4 tsp. ground ginger


How Do I Make Savory Squash and Carrot Soup?

Here is how you make Savory Squash and Carrot Soup:

Heat the canola oil over medium-high heat in a soup pot. Saute carrots, shallot, onion, and apple, stirring occasionally, until vegetables are softened (about 8 minutes).Add garlic and butternut squash; saute for about 2 more minutes.Add stock and all seasonings; stir well. Bring to a boil. Reduce heat and cover. Simmer for 15-20 minutes.Use an immersion blender to puree the soup.
