3 stalks lemongrass, partially broken & bruised
1/2 c dry white wine
1/2 t thyme
salt & pepper to taste
1 T Texas Pete hot sauce
1-1/2 c shelled edamame

Saute garlic, green onions, & ginger in olive oil until softened, no more than 5 minutes. Add vegetable broth, water, lemongrass, wine, mushrooms, salt, pepper, thyme, & Texas Pete sauce. Let simmer over a low heat for 20 minutes. Add edamame & cooke 5 minutes more. Remove lemongrass.
