1 1/2 lb lean ground beef (turkey would probably work just as well, or you could even omit the meat for a meatless dish)
1 small to medium onion, chopped
1 can beef broth
1 can white or red kidney beans, drained
1 can black beans
1 can garbanzo beans (chick peas), drained
1 small can mushrooms, drained
1 small can chopped black olives
1 can diced tomatoes (flavored ones are great)
2 cans minestrone soup
1 1/2 envelopes taco seasoning
1/2 cup water

Here is how you make Everything But the Kitchen Sink Taco Soup:

Brown ground beef in a large stock pot and drain well. While beef is browning, chop onion and open all the canned items draining the beans, olives, and mushrooms. After removing meat from pot to drain, sautee chopped onion in pot for a few minutes. Add meat to onion. Pour the broth, beans, tomatoes, mushrooms, olives, and soups over beef and onion mixture. Stir to mix. Stir taco seasoning into water. Pour over mixture in pot and stir well. If you want thinner soup, add more water. Cook over medium heat until everything comes to a boil. Cover, reduce heat to low, and simmer for 20 minutes, stirring occasionally. Garnish each serving with a dollop of sour cream if desired. Serve with tortilla chips.
