4 cup Imagine Organic Vegetable Stock
4 tbsp Mina Harissa Spicy
2 cup Milk, SO Delicious Coconut Milk, unsweetened, 1 cup serving

How Do I Make Harissa Tomato Soup?

Here is how you make Harissa Tomato Soup:

Preheat oven to 375 F. Lightly toss tomatoes, red pepper, onion and carrot halves in 1 Tbsp olive oil, oregano and 1/2 tsp of salt. Place on a roasting pan and roast until tomatoes and onions are tender, about 20 minutes. Remove tomatoes, pepper, onions and carrot from oven. Chop onions, pepper and carrots, leaving tomatoes whole. Put remaining olive oil in soup pot over medium heat. Add chopped onions, pepper and carrots and whole tomatoes with the juice from the pan. Stir and saute. Add garlic and harissa paste. Stir to combine. Add vegetable stock and bring to a boil. Boil for 5-10 minutes to ensure carrots and onions are soft. Remove from heat. Using an immersion blender, or working in small batches with a regular blender, puree the soup until smooth. Return to low heat and add paprika, salt and pepper. Bring to a low simmer for 5 minutes. Add coconut milk and return to a low simmer. Keep at a low simmer until ready to serve. Garnish with parsley or cilantro and croutons!Serving Size:?8 - 1 cup
