Melt half the butter in saucepan over low heat. Add carrots & onion & fry 5 mins until onion is soft.Cut tomatoes in half & add to pan. Cover with lid & fry gently to soften & draw out juice. Stir in stock & add bacon rind, sugar, tomato puree, salt & pepper. Bring to boil & simmer gently 1 hour until vegetables are soft.Draw off heat & pass soup through sieve to make a puree. Return to pan. Add the remaining soup pieces to blended butter & flour on plate. Add to the soup. Stir until melted.
