Here is how you make Mike's Heirloom Tomato Soup:

Heat large nonreactive sauce pan. Add 1/4 Olive Oil. Add Carrot, Onion, Celery and pepper flakes and sautee until vegetables are fragrant and starting to color. Add Garlic and Sautee until golden. Add tomatoes water and salt. Simmer until tomatoes are tender, (20 minutes or so). Using an immersion blender, process soup until smooth. Allow to cool. Add to foodmill and remove seeds and peels. Return to heat and bring back to simmer. Serve warm in shallow bowls and drizzle with Extra Virgin Olive Oil.Serving Size:?Serves 6
