This is a very delicious soup, very filing and yummy. I like to add the chili powder for a light after kick but you don't have to add it.Originally this recipe was from Crock pot recipe but i have changed some things.Please note that the salt content can very depending on which canned tomatoes, tomato paste and chicken broth you use. Also if you add extra salt in the end.

2 cans (28 ounces each) peeled whole tomatoes, no salt added - drained and liquid saved

3 t packed brown sugar
1 Medium finely chopped onion
3 Cups low sodium chicken broth
3 T Tomato Paste
0.25 t ground allspice
5 Ounces evaporated milk
0.25 Cup shredded fresh basil
1 T Chili Powder

Salt and Pepper to taste



How Do I Make Roasted Basil Tomato Soup?

Here is how you make Roasted Basil Tomato Soup:

1. Preheat oven at 450F. 2. Line baking sheet with foil and spray with nonstick cooking spray.3. Remove tomatoes from cans (make sure to save 3 cups of the liquid) and arrange tomatoes on the baking sheet.4. Sprinkle tomatoes with brown sugar and top with onion.5. Bake for 30 minutes (until tomatoes look dry and light brown). let cool slightly (about 10 minutes)6. Finely chop tomatoes and place them in the crock pot.7. Add the 3 cup of reserved liquid from canned tomatoes, tomato paste, broth, and all spice in the crock pot. Cook on high for 4 hours.8. Add evaporated milk, basil, chili, and salt/pepper.
