1 tbsp olive oil
4-6 fresh tomatoes diced (I usually look for softer tomatoes)

2 cups vegetable stock or water (I use water to keep salt and calorie content down)
1 tbsp sweetener (I use splenda in the dry form)
? cup soy milk (If you aren?t Vegan, could use milk)

Here is how you make Shanna's Tomato Soup:

In a large soup pot, saut? the onions, garlic, salt, dill, and pepper in oil on medium heat until onions are translucent. Add the tomatoes, ? cup water, 2 cups water (or broth), and sweetener. Cover and simmer over low heat for 20 minutes. Add the milk. If you want to make creamy, once cooled, put partial or entire soup into blender or food processor. This will make the consistency of the soup more creamy. When serving, if too spicy, add some splenda. The sweetener will cut the spicy flavor a bit. Enjoy!!
