Chop all vegetables. Chop/cube turkey and set aside. Add broth and vegetables to large pot. Season with salt, pepper, and garlic. Bring to boil. Reduce heat to low simmer. Simmer until veggies are tender crisp. Add dry rice. Increase heat to boil, reduce heat again to low simmer and simmer 20 min. Add turkey, increase heat to boil. Add cornstarch mix to boiling pot, continue cooking until thickened. Turn off heat. Allow to cool a bit.
