Here is how you make Italian Turkey Kale Soup:

Heat the oil in a pot over medium heat. Add the turkey and cook 3-4 minutes or until slightly browned. Add celery, carrots, onion, red pepper, italian seasoning and salt & pepper. Cook for 5 more minutes until veggies are tender. Add the garlic and cook for 1-2 minutes. Add chicken broth, water & bay leaf and bring to a boil, then reduce to simmer for 20 minutes.
