This is a comfort food of mine since I was a kid. The only change I've made from my Mom's recipe is to use ground turkey instead of ground beef. This soup freezes well and tastes greta the next day. Spices have relatively few calories so adjust them to your taste and you will not affect the nutrition info too substantially. The same thing applies to the veggies.

2 lbs ground turkey
1 head of cabbage cut-up
1 48 oz can of tomato juice
1 16 oz can of green beans
1 can tomatoes
1 T basil
1 T oregano
salt to taste
2 T pepper (or to taste)
1 cup diced onion
1 cup mushroom (or 1 can)
1 bay leaf
3-4 T Worcestershire sauce
3 cloves garlic
1 cup sliced carrots


How Do I Make Mom's Soup?

Here is how you make Mom's Soup:

Brown ground turkey, then combine all ingredients in large (>8 qt) pot or large crock pot and cook 2-3 hours until cabbage and carrots are tender. (longer in crock pot). Serve over rice or noodles. I always just "dump" spices like oregano, worcestershire, garlic, etc. rice is not included in the nutrition info.
