chop half the onion and half a medium bag of baby carrots.sautee the chopped carrots and chopped onion in olive oilpour vegetable broth into large pot. cook the farro and lentils according to the instructions on the packaging, being careful not to overcook the lentils. while you have the carrot/onion combo sauteeing, chop the remaining onion and carrots. add newly chopped carrots and onions to the broth with the lentils and farro. add the sauted veggies. reduce soup to a simmer for an hour so the lentils and farro can absorb all the flavor. thats it!! simple. delicious. you can reduce the amount of onions but i love onions so nope! i would have added rice as well but was all out. rice would make the carbs go up but would also make it more filing.
