2 T. olive oil
3 cloves garlic, chopped
1/4 tsp. red pepper flakes
1 med. onion, chopped
2 carrots, peeled, sliced
2 stalks celery, peeled, chopped
1 sm. zucchini or yellow squash, sliced
2 C. water (or stock)
1 (15 oz.) can diced tomato
1 (15 oz.) can tomato sauce
1 (15 oz.) can small white or cannellini beans
10-14 oz. frozen green beans, cut into 3" length
salt and pepper, to taste
1 T. basil, or 1 C. fresh, torn

GARNISHES:
parmesan cheese, for garnish (optional)
plain yogurt, for garnish (optional)
cottage cheese (optional)


How Do I Make 15-Minute Vegetable Soup?

Here is how you make 15-Minute Vegetable Soup:

Heat oil in large stockpot, and add garlic and red pepper flakes. Stir in onions, carrots, celery, and zucchini, and saute about 10 minutes.Add water/stock, tomatoes, white beans and green beans. Bring soup to a boil, season with salt and pepper. Lower heat and simmer 5 minutes more. Turn off heat and wilt fresh basil into the soup (or use dry).Serve with garnishes (parmesan, yogurt) and warm bread. To bump up protein content, help cool the soup, and increase creaminess, I also like to add 1-2T. cottage cheese to my serving. Delicious! Yields appx. 8 1-cup servingsNumber of Servings: 8
