Here is how you make Deb's Italian Vegetable Soup:

Makes 8 servings of 1 and 1/3 cup each1.In a large stock pot, over medium-low heat, heat olive oil and saute garlic for 2 to 3 minutes. Add onion and saute for 4 to 5 minutes. Add celery and carrots, saute for 1 to 2 minutes. 2.Add broth, water and tomatoes, bring to boil, stirring frequently. Reduce heat to low and add red sherry wine, kidney beans, cannelini beans, spinach leaves, zucchini, all dried spices, salt and pepper. Simmer for 30 to 40 minutes, the longer the better (up to several hours). 3.Ladle soup into bowl and sprinkle with Parmesan cheese.
