1-1/2 to 2 pounds beef stew meat
4 medium potatoes, peeled and diced
5 - 6 carrots, peeled and diced
1 bell pepper, cored, seeded and diced
1 medium onion diced
1/4 head cabbage, diced
2 - 3 hands full pearl parley (about 1-1/2 cups)
1 can stewed tomatoes with juice
1 large can V8 mixed vegetable juice
Worcestershire sauce
seasoned salt
garlic powder
Basil


How Do I Make Grandma's Awesome Vegetable Soup?

Here is how you make Grandma's Awesome Vegetable Soup:

Put meat in a large stockpot and fill 1/4 to 1/3 full of water. Pour in enough Worcestershire sauce to color the water pale brown (about 1/8 cup). Add several good shakes of seasoned salt, garlic powder and dried basil. Heat to boiling and reduce to a hard simmer. Stir well and simmer 30 minutes.Prep potatoes and carrots. After 30 minutes on simmer, add potatoes and carrots. Bring liquid back to simmer , reduce heat and simmer 15 to 20 minutes. Prep onion and bell pepper. After 20 minutes on simmer, add onion and bell pepper. At this point add enough addittional HOT water to cover food by a good inch. Continue to add hot water throughout the process to keep the vegetables covered and add more Worcestershire sauce and other seasonings to taste to develop a robust broth but keeping the liquid thin.After adding pepper and onion return soup to simmer. After simmering for 15 to 20 minutes add cabbage and return to simmer. Check seasonings and adjust if necessary. Simmer 20 to 15 minutes more.Add barley. Keep simmer going and stir frequently. Check often at this point for another 15 to 20 minutes. Make sure barley is completely cooked before continuing.Add the stewed tomatoes and V8 juice. Heat through and serve.
