1.5 c. tomato juice

1/4 c. white wine
1 c. lentils, rinsed and picked over
1/2 t. marjoram
1/2 t. thyme
2 med. tomatoes, chopped
1 small potato, peeled and chopped
1/3 c. quick cooking barley
1 T. lemon juice

Here is how you make Italian Lentil and Vegetable Soup:

Heat olive oil and butter in a large pot. Add celery, carrot, onion, and garlic and saute 5-7 minutes or until vegetables begin to soften. Add broth, water, tomato juice, wine, lentils, marjoram, and thyme. Bring to a boil, cover, and simmer 10 minutes. Add tomatoes and potato; simmer 10 minutes. Add barley; simmer 10 minutes.
