1 can Navy beans drained and rinsed (optional)
1 sm can sweet corn (with juice)
1/2 C frozen or fresh peas
2 stalk celery sliced
3 C whole or sliced mushrooms
3-5 sm red potatos cubed
1 Tbsp oregano
3-5 leaves fresh basil
paprika if desired

It is important to prep all the ingerdiants beforehand including, slicing, peeling, and opening cans so that once you've gotten started you can just add it all and let it cook.In a large stockpot add the EVOO, minced garlic and onionand allow to sautee for a short period of time on very low heat (otherwise they will burn). Then add the broth and the herbs and any additional spices you desire. Add you potatoes first and then add the rest of your vegetables, the whole can of stewed tomatoes, the whole can of corn, the drained navy beans and bring to a boil.Cover and simmer for anywhere from 45 min to an hour.
