1/2 Onion, diced
1/2 stalk Celery, diced
3 Carrots, chopped
1/3 container extra-firm Tofu
1/4 cup Green beans
1/8 cup frozen spinach
3 cups Water
1 cup Chicken broth
3 tsp. Miso paste
1/3 package (3 oz dry) Udon noodles


How Do I Make Miso Vegetable Udon Soup?

Here is how you make Miso Vegetable Udon Soup:

Cook noodles according to package instructions. When done, drain and rinse with cold water, and set aside. Saute onions & celery in a small amount of oil over low heat. When soft, about 5 minutes, add carrots and saute another few minutes. Add tofu, saute for 1 minute, then add chicken broth and water. Add green beans & spinach. Turn up heat to bring to a boil, then reduce heat and simmer 10 minutes.
