Here is how you make Nan's Vegetable Soup:

Boil shank meat with bone for as many hours as needed to make meat fall off the bone. Remove and strain broth. Separate meat from bone and fat and return to broth. Add can of tomatoes, onion, celery, carrots and parsley. Bring to a boil and then turn to simmer for 4 hours. Allow 15 mins before serving to add noodles.
