2 leeks, thinly sliced

1.2 ltr/2 pt stock
2 tbsp curry paste
400g/14 oz can of mixed beans, drained
2 tbsp lemon juice
2 tbsp chopped fresh parsley (optional)

Here is how you make Spiced Bacon and Vegetable Soup:

Cook bacon, onion and leeks for 5 minutes until softened, add a little water to prevent sticking if necessary. Stir in the carrots and potatoes and cook for 2-3 minutes. Pour in the stock, bring to the boil, cover as simmer for 20 minutes until the vegatables are tender. Liquidise half the soup mixture or push through a metal sieve using a wooden spoon.Return the liwuidised soup to the pan and stir in the curry paste, beans, lemon juce and seasoning.
