Mix all ingredients (except Swiss Chard & Cabbage) in large heavy pot. Bring to a near boil, then simmer approximately 2 hours. Can change the flavor by adding broth, either chicken or beef; vegetable for vegetarian. Add the cabbage & chard the last 45 minutes.The amount of water depends if you want a soup or stew-like consistency. Of course you can add other vegetables such as squash, other beans etc. Using seasoned diced tomatoes also adds flavor.
