1 poblano pepper, finely minced, seeds and ribs removed
1 jalapeno pepper, finely minced, seeds and ribs removed
12 ounce can pinto beans
1 bag frozen corn kernels
28 ounces chicken broth
2 ounces tortilla chips, plus more for garnish
1 handful cilantro, chopped for garnish
sour cream, if desired for garnish
shredded cheese, if desired for garnish

Here is how you make Khristina's Vegetarian Tortilla Soup:

Finely mince onion, jalapeno pepper, and poblano pepper. In a large pot, put enough oil to cover the bottom of the pot. Saute onions, jalapeno peppers, and poblano peppers, about 5 minutes. Add garlic and saute until browned, a few minutes. Add cumin and mix in. Add tomato and its juice, chicken broth and pinto beans (drained). Bring to a boil, reduce to a simmer and let simmer 5 minutes. Add corn and tortilla chips. Simmer 5 more minutes. Taste and adjust seasonings.
