Combine peas, carrot, celery, onion, garlic, bay leaf, thyme, water, and hot pepper sauce in a stock pot. (Add pepper sauce to taste). Place over medium-high heat and bring to a boil. Boil for 20 minutes. Skim the surface to remove any foam that forms.Reduce heat to low, cover pot, and simmer until peas are tender enough to mash with the back of a spoon.Season soup with salt and pepper to taste.For a smoother soup, puree half or the whole soup in a blender (be careful to keep the lid of the blender ajar while holding the lid with a towel to allow some steam to escape.
