1/2c onion
3 c. broccoli
2 small potatoes
4 c. chicken broth
1/4 c. flour
8 TB margarine
1 can evaporated milk
2 c. sharp cheddar cheese


How Do I Make Cheddar Veggie Soup?

Here is how you make Cheddar Veggie Soup:

Dice carrots, onion (can also add celery). Saute in 4 TB of margarine until tender. Add broth, broccoli and diced potato. Bring to a boil, let simmer for 10 -15 minutes. In separate saucepan melt remaining 4 TB of margarine. When melted whisk in flour. Will form a paste, slowly add the evaporated milk. Once completely incorporated continue to stir until it starts to thicken. Add cheese, stir until cheese is completely melted. Then add the cheese mixture to boiling veggie mixture. Mix together.
