1 lb. pkg. Winco Garden Blend veggies
2 cups cubed sweet potatoes
1 medium onion, chopped
10 oz. pkg. cremini mushrooms
2 oz. spinach, fresh
5 oz. summer squash, diced
1 oz. red bell pepper, diced
2 cups carrots, grated
4 tbsp. Frontier low sodium vegetable broth powder (or other)
4 tsp. curry powder

Here is how you make Creamy Curried Veggie Soup:

Add cauliflower, sweet potatoes, onion and curry powder to stock pot. Heat to boiling, then simmer covered about 20 minutes until cauliflower is tender. Process all until smooth in a blender (or use a stick blender in the pot) then pour back into stock pot with the rest of ingredients. Heat to boiling again then simmer about 10 minutes until all veggies are cooked. Season with salt. Serving Size:?Makes 8 2-cup servings
