Here is how you make Janet0116 Super Roasted Veggie Soup:

Slice/chop summer squash, bell peppers, mushrooms, eggplant, cauliflower and tomatoes into equal size pieces. Coat with 4 Tbps. olive oil & 2 tsp salt and roast at 450 for approximately 20 minutes until carmelized.In the meantime, heat 1 Tpbs olive oil in large stock pot and saute chopped cabbage, okra and onion until softened. Add 3 tsp. sugar to help carmelize. Pour roasted veggies in stock pot, add frozen corn, rotel tomatoes, tomato paste, boullion cubes and 4 cups of water. Bring to boil and simmer until everything is heated through. Add herbs and salt to taste. Take out 3 or 4 cups of mixture and place in food processor. Process until smooth. Add back to soup and stir. This step creates a creamy texture without any cream.
