24 oz V8 Juice-any will do(used essential antioxidants for recipe)
3 cups water
1/2 c broth(used beef for recipe)
1 cup chopped baby zucchini
1 1/2 cups finely chopped cabbage(or can use partial bag of cole slaw mix)
1/2 cup chopped baby carrots
3 garlic cloves minced or chopped
1/2 cup dry bulgur
1/2 cup barley
3/4 cups lentils
1/2 block of firm tofu
whatever other veggies you'd like to include


How Do I Make K's Filling Veggie Soup?

Here is how you make K's Filling Veggie Soup:

Put V8 and water in a pot and turn on heat to medium. Pour in broth and let simmer. After it starts to low boil, put in the bulgur, barley and lentils and let simmer. Stir occasionally while chopping veggies. Add veggies as they are chopped and season to taste. Cut tofu in cubes and put in soup. Let simmer so all cooks good. Makes 8 1 cup servings.
