4 cups of rinsed and chopped kale
2 celery stalks chopped
1/2 large onion chopped
2 medium carrots
1 garlic clove (could add more to taste)
1/3 of a red bell pepper chopped
4 cups of prepared better than bullion
2 cups water
1/2 tablespoon of olive oil
salt and pepper to taste.

Here is how you make Kale and Veggie Soup:

I chop all veggies and keep the peppers, onion, celery and carrots together and kale and beans togetherI heat oil in soup pan add the peppers, onion, celery and carrots, garlic and salt and pepper to taste and heat till a nice smell envelopes the house 5-7 minutes then I add the beans and kale and cook till kale wilts a bit. Then I add the prepared better than bullion and water. Bring to a boil and turn to a simmer. I let it go without a lid to condense the flavor and simmer off some of the liquid. I cook until I can't wait any longer and serve. Reheats real well and lasts around a week in the fridge.
