Here is how you make Roasted Root Veggie Apple Soup:

Preheat your oven to 400 degrees. Peel and chop all the root vegetables to similar size (small chunks). Spray your pan with olive oil, throw veggies in the pan and spray them a bit as well (if you don't have an olive oil sprayer, drizzle veggies with 1/2 tbsp olive oil and toss well). Put pan in the oven for 45 min to an hour.Heat 1 1/2 tbsp olive oil over medium heat in your soup pot. Toss in the onions and cook until translucent, then reduce heat to medium low. Let onions cook until golden and starting to brown, then add apples and your spices. Keep cooking over medium low, stirring occasionally while you wait for the root veggies to cook. Once the root veggies are done (fork tender), turn the oven off, but leave the veggies in the oven. Add 4 cups vegetable broth to onions and apples and bring to a simmer. Simmer for about 15 minutes.Remove the roasted veggies from the oven. Remove your soup pan from the heat. Add the roasted veggies to the soup pan and 2 cups of water. Use an immersion blender right in the pot or transfer small portions to your regular blended. Blend until smooth. Add remaining 2 cups of water until the soup is the consistency you like.
