Mix first 7 ingredients together. Form into little balls (1 inch or so) and drop into simmering broth. Stir gently until meatballs rise to the top. (Once they float, they are cooked through) Add escarole/spinach and carrot and simmer for a few minutes (or until frozen spinach melts). Add pasta at the very end and cook just until al dente.
