- 1 package of frozen spinach, 10 oz, thawed, drained thoroughly
- 1/4 cup of shallots, minced and sauteed in a little olive oil
- .5 cups of non-fat Greek yogurt
- 4 oz neufchatel cheese (softened/ at room temp.)
- 1/2 cup reduced fat Italian shredded cheese blend
- a handful of black olives, chopped (optional)
- salt, pepper, thyme, and something spicy (cayenne pepper, paprika, etc) to taste

- Preheat oven to 375- Heat olive oil in pan over medium heat- saute shalllots until softened, about 3 minutes- Make sure the spinach and artichokes are as drained as possible- Combine the artichoke hearts, spinach, shallots, olives, Greek yogurt, neufchatel cheese, shredded cheese, and spices in a mixing bowl- spray a baking pan (small) with cooking spray- put mixture in baking pan and bake, covered, for about 20 minutes- take the cover off for 5 minutes and let the top get a little brown- Enjoy!Serving Size:?Makes 12 1/4 cup servingsNumber of Servings: 12Recipe submitted by SparkPeople user YISMET.
