Chop spinach and cook until just wilted. Transfer wilted spinach and a small amount of liquid to a blender and pulse to puree. Combine flour, baking powder, salt & oil in a wide bowl. Add pureed spinach and mix to form a ball. Knead dough 5-7 minutes, or until it becomes smooth and elastic, adding additional water (or reserved cooking liquid from the spinach) if the dough is too dry.Let the dough rest, covered, for 20 minutes. Divide and roll into 6 even balls, cover, and let rest for an additional 10 minutes. Heat a large skillet over medium heat. Roll out each ball as thin as you can manage. Cook one at a time for 30-60 seconds per side, or until done.
