This is the raw version of my DF/GF Spiced Butternut squash Soup. I used Avocado, Buckwheat and soaked flax instead of Tofutti Cream cheese, and Rice to thicken the mix. Wash and peel the squash - remove the seeds and pulp - Chop. Wash and chop up the carrorts and chop the garlic and onions. Put the squash, and all other ingredients into the food processor (depending on how big you FP is you may have to do this in stages. Add to blender and puree until smooth - use the reserved soak water to smooth out the blend - this will make at least 10 cups so again you may have to blend in stages (i.e. half and half) and add water as needed to smooth and get the consistency you desire. You could also warm this for non-raw eaters and add a dollop of Sour cream.
