I package keilbasa sausage, sliced
4 boneless skinless chicken breast, cubed
1 can diced tomatoes w/ chilis
1 cup tomato juice
1 can butter beans (lima), rinsed
1 can kidney beans, rinsed
1 medium onion, diced
2 cups carrots, diced
1 stalk celery, sliced
2 cups chicken broth
cajun spice, to taste
blackening seasoning, to taste


How Do I Make Cajun Stew?

Here is how you make Cajun Stew:

(Season all steps slightly as you go to max flavor.) In large skillet, saute onions with sausage slices. In large soup pot bring broth and tomato juice to a boil. Add carrots, celery, tomatoes, and beans. When onions get a caramel color, add to soup pot. Fry chicken pieces in same pan until cooked through (do not brown, just cook). Add chicken to pot. Reduce soup to a simmer for several hours stirring occasionally. You could transfer this soup to a crockpot once prepped to simmer. Makes about eight servings of a standard bowl.
